High Fibre Moist Banana Bread |

This is incredibly tasty and a more healthy alternative to some other moist banana bread recipes
Ingredients
- 2 cups flour
- 2 eggs
- 1/3 cup butter
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 ripe bananas (They're best when a bit brown and the kids won't eat them)
- 10 pitted prunes (cut into small pieces)
- 10 pitted dried apricots (cut into small pieces)
- 2 tablespoons milk
- 1 cup all-bran cereal
- 1/3 cup maple syrup
Instructions
Get started by preheating your oven to 350°F - It should be nice and hot about the time we finish the folowing:
In a large mixing bowl combine mashed bananas, cereal, milk and dried
fruit. Use a potato masher to mix and mash well. Let stand for 5
minutes.
Grab a kitchen bowl and mix flour, baking powder and baking soda together - put to one side.
In mixing bowl, beat butter and maple syrup; add the eggs and beat well. Stir in cereal mixture. Add flour mixture, and stir well until combined.
Spread a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 minutes or until toothpick comes out clean. Let cool 10 minutes before removing from pan, and cool completely before slicing.
