High Fibre Moist Banana Bread

This is incredibly tasty and a more healthy alternative to some other moist banana bread recipes

 

Ingredients

  1. 2 cups flour
  2. 2 eggs
  3. 1/3 cup butter
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon baking soda
  6. 3  ripe bananas (They're best when a bit brown and the kids won't eat them)
  7. 10 pitted prunes (cut into small pieces)
  8. 10 pitted dried apricots (cut into small pieces)
  9. 2 tablespoons milk
  10. 1 cup all-bran cereal
  11. 1/3 cup maple syrup

Instructions

Get started by preheating your oven to 350°F - It should be nice and hot about the time we finish the folowing:

In a large mixing bowl combine mashed bananas, cereal, milk and dried fruit. Use a potato masher to mix and mash well. Let  stand for 5 minutes.

 

Grab a kitchen bowl and mix flour, baking powder and baking soda together - put to one side.

In mixing bowl, beat butter and maple syrup; add the eggs and beat well. Stir in cereal mixture. Add flour mixture, and stir well until combined.

Spread a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 minutes or until toothpick comes out clean. Let cool 10 minutes before removing from pan, and cool completely before slicing.
